DYNE’s Kamayan Dinner is a traditional Filipino Feast that means “to eat with your hands” while seated at a communal table with friends and family, but is not limited to only Filipino foods and can be customized to your preference.
Chef Dayne Tanabe was born and raised on Oahu, Hawaii. Dayne is a graduate of Kapiolani Culinary Institute of the Pacific in Culinary Arts, Patisserie Arts & Liberal Arts while also holding a Bachelor of Science degree in Travel Industry Management from the University of Hawaii at Manoa with an emphasis in hotels and restaurants.
Chef Dayne was previously the Chef De Cuisine at Hilton Waikoloa Village and responsible for all 9 restaurants for the past almost 18 years. Chef Dayne was able to travel the world through Hilton to develop his knowledge and skills in New York, Florida, San Diego, Los Angeles, Honolulu and Fukuoka Japan.
Chef Dayne has had extensive culinary experience on Oahu as a sushi chef at Moa Mua Tei, a Sous Chef at Baja Betty’s Southwest Bar & Grill, and Sous Chef at Keoni’s, located in the Outrigger Ohana Waikiki hotel. Dayne’s culinary talents have been featured in West Hawaii Today’s At Home Magazine, and at a number of community events including the Hawaiian International Billfish Tournament tasting event, the Kona Brew Fest, Evening In Paradise at Mauna Lani, Taste of Hawaii at Four Seasons, Evening Under the Stars, Big Island Chocolate Festival (1st Place People’s Choice, 1st Place Savory), Taste of the Hawaiian Range, Hawaii Food & Wine Festival, Lavaman Triathlon, and the annual Visitor Industry Charity Walk.
In 2018, DYNE, a mobile Pop-Up concept restaurant was born with a focus on events, meal preps, catering and private chef services with an emphasis on being able to feed the community with good food.
Participated in the Hawaii Kuauli Taste of Pacific & Asia Festival 2022, where I took 1st place in both Judges Competition and People’s Choice Competition and received $1,000 to donate to 4 non-profit organizations, which included Chef Hui (Honolulu), Culinary Institute of the Pacific (Honolulu), Hilo Community College Culinary Program (Hilo) and Palamanui Community College Culinary Program (Kona).
DYNE specializes in small upscale catered events and private chef services. Chef Dayne also continues to do pop ups in between events to continue to feed his community.
